The Saturday shelves

What we bake for a Saturday, from the first croissant at five to the last doughnut at nine, and why it all sells out by noon.

Saturday is everything at once. Here is the order the shelves fill up in.

  • 5:00 croissants and pains au chocolat go in.
  • 6:00 sourdough, rye and the seeded loaf.
  • 6:45 cinnamon buns, still warm when we open.
  • 9:00 doughnuts, filled to order.

If you want something in particular, pre-order on Friday by 8 pm and it will be waiting.
